This classic New York style cheese cake made with Indian ingredients taste delicious and it is dense and rich and light at the same time. This cheese turned to be perfect and everyone liked it at home. It has soft velvety and silky texture. This is a classic New York style cheese cake with biscuit crust and creamy cheese filling. Usually cheese cake has graham cracker crust however it is not available in India so I used digestive biscuits they work pretty well.
Cheese cake is very easy to make if you follow the recipe to the T. Make sure all the ingredients are at room temperature which is key to get good cheese cake. Use good quality cream cheese. To make it even more creamier i used heavy cream in the recipe. Water bath method ensures soft cheese cake so do not skip water bath method.
Ingredients that you will require
Cream cheese – choose good quality cream cheese as the whole taste will depend upon the cream cheese used. I used Britannia brand which is easily available at amazon and big basket
Digestive biscuits – Traditional cheese cake crust is made of graham crackers which is not available in India. So i used digestive biscuits this are not very sweet hence gives good results. You can also use plain Marie biscuits for the crust but taste may differ slightly
Powdered sugar
Heavy cream You need heavy cream for this recipe i used whipping cream, i used non diary whipping cream which is easily available in India.
Sour cream I used homemade sour cream but you can use the store bought ones.
Egg
Vanilla essence
Corn starch Helps in binding and it gives nice texture to the cake
Topping: As the strawberries are in season i made use of it, I topped the cheese cake with strawberry sauce. But you can add any topping of your choice.
Bake cheese cake in Water bath
Cheese bake is usually baked in water bath method. Cheese cake tin is wrapped in aluminium foil and then baked in water bath method. which means setting the wrapped cheese cake tin in large pan or tray filled with hot water.
Usually while baking in a oven, it remains dry inside which is good for cakes and not cheese cake. In cheese cake we want the outer layer to remain soft unlike the other cakes. so water bath method creates moisture that prevents the cake dryness and forming cracks on top
Few tips and tricks
- Make sure that all the ingredients are at room temperature

Ingredients
- 12-14 Digestive biscuits
- 3 tbsp Butter
- 400 gms Cream cheese
- 2 tbsp Powdered sugar
- 2 tbsp Sour cream
- 1/4 cup Heavy cream room temperature
- 2 Egg
- 1 tsp Vanilla
- 1 tsp Lemon juice optional
- 1 tbsp Corn flour
Strawberry jam
- 1/2 cup Strawberry
- 2 tbsp Sugar
- 1/2 tsp Corn flour mixed with 1 tbsp water
- Lemon juice
Instructions
- Firstly take spring form cake tin and cover it with aluminium foil and set aside
- Add the digestive biscuits in to a blender jar and blend it to fine powder
- Now add the biscuits crumbs in to a mixing bowl, add melted butter and mix it well
- Add the biscuits crumbs into spring form pan and press it using a spoon or using a back of cup press it really tight to the tin and place it in freezer for 10-15 minutes or until you prep the the filling
- In a large mixing bowl take cream cheese, powdered sugar and beat it in a medium speed at 2 minutes or until smooth
- Now add sour cream and beat it till combined say for 30 -40 seconds
- Add Heavy cream and beat it again
- Add in the eggs , lemon juice and vanilla essence and beat it for 1 minute in medium speed
- Finally add 1 tbsp corn flour and mix it well do not over mix. Final cheese cake batter should be smooth without any lumps in it
- Take the spring form pan and pour the cheese cake batter to it
- Now place the spring form pan in a tray filled with hot water
- Bake at 180 degree Celsius for 30 minutes and then reduce the temperature to 150 degree and bake for another 30 minutes and once the time is up, switch of the oven without opening the door and let it rest another 45 minutes inside the oven
- Take the cheese cake from oven and let it sit in room temperature for 30 minutes and then cover it with cling sheet and place it in refrigerator for 4-6 hours or over night
Strawberry sauce
- Chop strawberry in small pieces
- Add chopped strawberries to a pan with sugar and cook it for 6-7 minutes or till the berries get soft
- Finally add slurry and switch of the flame. cool the sauce completely before serving
- Once the cheese cake is chilled take from refrigerator and let it rest in room temperature for 20-25 minutes and then slice it serve it with chilled strawberry sauce strawberry sauce or just like that
