This ladoo is a great addition for any festivals, In south india boondi ladoo is made during festivals and also for marriage functions. My grandma is an expert in making boondi laddu, she even made 300-400 ladoo for an small functions.
Laddu recipe requires only minimal ingredients like gram flour, sugar, ghee and oil to deep fry. Ladoo making is not a tedious process if you follow the exact measurements. I have shared many tips to make boondi ladoo hence follow this boondi laddu recipe to get perfect ladoo

Tips to make perfect boondi laddu
Boondi batter should neither be thick nor thin it should resemble like dosa batter consistency
Use Boondi ladle or flat perforated ladle to make boondi
After each use wipe the Boondi ladle(jhara) with tissue or wash it and then use it for next batch only then you will get round shaped boondi
Fry the boondi in hot oil in medium to high flame
Fry boondi only till they are cooked do not make them crisp
If boondi becomes crisp then laddu will not be soft

Ingredients
To make sugar syrup
- 1 cup Sugar
- 1/2 cup Water
To make Boondi laddu
- 1 cup Besan (gram flour)
- 1 pinch Baking soda
- 1 pinch Yellow food color Optional
- Water as required
- To fry Oil
- 2 tbsp Ghee
- 2 tbsp Cashews and raisins
- 1/4 tsp Cardamom powder
- 2-3 Cloves Optional
- 1/8 th tsp Edible camphor Optional
Instructions
To make boondi
- In a bowl add gram flour,
- Add baking soda,
- Add food color if required and mix it well
- Now gradually add water and mix it to smooth,
- batter should neither be thick nor thin, it should resemble like dosa batter consistency
- Heat a kadai or pan with oil, (Note : Oil should be very hot while dropping the boondi)
- Take laddle full of batter and slowly pour it in a boondi laddle (jhara)
- Fry boondi till they are golden in high flame (Note: Fry boondi only till it is cooked do not make them crisp) Take it out and set it aside
To make sugar syrup
- In large pan take sugar and water and mix well to dissolve it
- And bring it to boil to attain 1 string consistency , once it reaches the consistency switch of the flame
To make boondi laddu
- Now add the prepared boondi to the sugar syrup and add cardamom powder (if adding cloves or edible camphor add at this stage ) with a help of spoon or spatula mix the boondi with sugar syrup well
- Heat a pan with ghee and fry cashews and raisins and take it out and set it aside
- Now take 1/2 cup boondi sugar mixture and add it to a blending jar and pulse it 2-3 times
- Add the ground boondi mixture
- Add cashews and raisins with ghee and mix everything together
- When the mixture is warm prepare the laddu, Grease your palm with ghee if required and shape the ladoo
- You can store laddu in airtight container at room temperature up to 10 days and enjoy
