Butter murukku deep fried snacks mainly made for festivals such as Diwali, Janmashtami / Krishna jayanthi and Vinayagar chathurthi. Its also known as benna chalki / murukku. My mom makes wonderful snacks and sweets for festivals, she never buys from outside. And also she prepares in large quantities. I learned this recipe from my mom, this recipe is very easy and requires few ingredients.
There are many varieties of murukku/ chakli, butter murukku is similar to other chaklis. But the only thing is it is lighter and softer than the other varieties.
In this butter murukku recipe, i have added roasted channa dal which makes it crunchier. I usually make dry snacks and store for some time. I make diamond cuts, Thenkuzhal, Mullu murukku and sometimes coconut milk murukku too, butter murukku which we buy from shop taste slightly from homemade. In the original butter murukku recipe does not call for chili powder but i added 1/2 tsp which is completely optional. You can add ajwain instead of jeera, Butter murukku dough should be soft and smooth. add water slowly and knead it. prepare these butter murukku for this Janmashtami / Krishna jayanthi and enjoy it family and friends.

Equipment
- Murukku press / chakli press
Ingredients
- 2 cup Rice flour
- 1/4 cup Roasted chana dal / potukadalai
- 1/4 cup Besan/ kadalai maavu
- 3-4 tbsp Butter
- 1 tsp Jeera
- Hing / asafeotida
- Salt for taste
- Water
- Oil for frying
Instructions
- Firstly add the roasted chana dal in a blender and make it fine powder
- In a large mixing bowl Take rice flour and add besan/ kadalai maavu
- Now add potukadalai / roasted gram dal powder ( seive ti)
- Now add Jeera/cumin, salt and hing I added a 1/2 tsp chili powder but that is optional
- Further add butter and rub it with flour mix well
- Now slowly add water and start kneading
- Now knead it to smooth and soft dough, if dough is tight then murukku will turn hard
- Now choose any star nozzel and fill the dough in the murukku press
- Now directly press the murukku in hot oil in medium flame
- Flip the murukku / chaklis and fry them till the they turn golden brown
- Store the murukku/ chakli in airtight container
