In south indian cuisine there are many chutneys recipes available to serve with idli and dosa. There are many ways to prepared carrot chutney. Coconut is optional in this recipe. But i have added coconut, because coconut thickness the chutney and it gives good taste. Saute the carrots with onion, ginger and garlic, and then add coconut and blend it to smooth. The other simple way to make carrot chutney is raw carrot chutney, in a blender add chopped carrot, coconut, green chilli, ginger and roasted chana dal(porikadalai), tamarind and add salt with little water and blend it to smooth. Use the leftover raw carrot chutney within 2-3 hours as this does not for long. serve this chutney with all south indian breakfast recipes

Instructions
- Firstly in a kadai heat some oil and add Urad dal and chana dal and saute it
- Now add chopped onions, ginger, garlic and red chilli and saute it
- Add roughly chopped carrot and saute it
- Now saute the carrots till the colour changes and add i to blender jar
- Now add shredded coconut, tamarind, salt and water and grind it to smooth
- Blend it to smooth
- In a tadka pan add oil, mustard seeds and curry leaves and once it crackles add it to chutney
- Serve it with idli dosa
