Due to this Rainy season i make lots of fried snacks at home sometimes i make dry snacks like butter murukku, diamond cuts and store it else something like these fritters though i know too much of fried snacks are not good but considering its homemade i feel its okay.

Cauliflower pakoda/gobi pakora recipe is crunchy and you can serve it with simple tomato ketchup or with mint chutney. Curry leaves are the main ingredients in this as it gives nice flavour to it, so add more curry leaves. I added fennel/sombu in this for the flavour. But you can also add ajwain instead of fennel. Rice flour added with besan make the pakoda crunchy. But if you don’t have rice flour add cornflour.

– Fristly cut and clean the cauliflower to small florets
– In boiling water add the cauliflower florets and switch of the flame and leave it for 5 minutes and drain the water and set aside ( this helps to clean the cauliflower )
– In a large mixing bowl take cleaned cauliflower and add chili powder, garam masala powder, turmeric, curry leaves, Green chili, ginger garlic paste and fennel/sombu
– Now mix all the ingredients with the cauliflower
– Rest the cauliflower mixture for 5 minutes, meanwhile heat the oil for frying
– Now add besan, rice flour and salt and sprinkle the water and mix well ( do not add more water )
– just coat the flours with cauliflower, it should not be watery
– Now drop the cauliflowers in hot oil
– Fry the cauliflower pakoda in medium flame and cook till they are golden brown
– squeeze a lemon juice on cauliflower pakoda and serve it hot

Ingredients
  

  • 350 gms or 2 cups Cauliflower
  • 2-3 spring curry leaves
  • 1 Green chili
  • 1/2 cup Besan
  • 1/4 cup Rice flour
  • 2 tsp Chili powder
  • 1/4 tsp turmeric
  • 1 tsp Garam masala
  • 1/2 tsp sanuf / fennel /sombu
  • salt as per taste
  • 1-2 tbsp Water
  • oil for frying

Instructions
