Chettinad chicken gravy/ South Indian chicken gravy is the most flavorful chciken dish. You can pair it with rice, roti and naan. It is too good with idli and dosa too. This is spicy curry. You can use the whole chicken cut into pieces or with legs with thighs.

There are different types of Chicken gravies the preparation and ingredients varies from region. To make chettinad chicken we have to prepare a ground masala with whole spices and coconut. This gives that nice flavor and the unique taste to chicken. I dont claim it is the authentic version as i dont know which is the authentic as there are thousands of recipes for chettinad chicken and they claim it as authentic. I usually make plain chicken masala for rice. This chettinad chicken i make only when we have guests and friends at home. Do not skip any whole spices in the ground masala as each spice has its own flavour and it compliments the dish.

Chettinad chicken is very spicy chicken gravy so you can adjust the spice level according to your taste.

You can also marinate the chicken before adding it to the gravy.. Just mix salt, turmeric and lemon juice with chicken and let it sit for 30 minutes.

You can use the whole chicken cut into pieces or with legs with thighs.
For Ground masala
– Heat a pan and dry roast the coriander seeds and take it once it turns aromatic
– Then add red chili, cinnamon. star aniseed, Kal paasi, mace , Fennel, Cumin and dry roast them
– Add shredded coconut and roast it
– Add this to blender jar and blend it to smooth with some water
For making chettinad chicken
– Heat a kadi with some oil and add bay leaf and Chopped shallots(chinna vengayam) or big onion and saute till they are soft
– Add curry leaves and ginger garlic paste and saute
– Then add chili powder and turmeric and saute
– Now add the chopped tomatoes and cook till they are soft
– Add in the ground masala
– Then add in the cleaned chicken and mix well with masala
– Add required water and salt and cover cook till the chicken is done
– Finally garnish it with lots of coriander / cilantro leaves and switch of the flame
– Serve it hot with rice, roti, idli dosa

Ingredients
  

For ground masala

  • 1 tbsp Coriander
  • 1 tsp Cumin / jeera
  • tsp Fennel / sombu
  • 5-6 Red chili
  • 1 Star aniseed
  • small Cinnamon
  • small Mace
  • 1 tsp Pepper
  • 2 kalpasi
  • 1/2 cup Coconut

Other ingredients

  • 500 gms Chicken
  • 1 cup Shallots (chinna vengayam)
  • 1 medium Tomato
  • Handful Curry leaves
  • 1 tbsp Ginger garlic paste
  • 2 tsp Chili powder
  • 1/4 tsp Turmeric powder
  • 2-3 tbsp Oil
  • Water as required
  • Salt

Instructions
 

For Ground masala

  • heat a pan and dry roast the coriander seeds and take it once it turns aromatic
  • Then add red chili, cinnamon. star aniseed, Kal paasi, mace , fennel, Cumin and dry roast them till they turns aromatic
  • Add shredded coconut and roast it till it turns golden
  • Add this to blender jar with some water and blend it to smooth

For making chettinad chicken

  • Heat a kadi with some oil and add bay leaf and Chopped shallots(chinna vengayam) or big onion and saute till they are soft
  • Add curry leaves and ginger garlic paste and saute
  • Then add chili powder and turmeric and saute
  • Now add the chopped tomatoes and cook till they are soft
  • Add in the ground masala
  • Then add in the cleaned chicken and mix well with masala
  • Add required water and salt and cover cook till the chicken is done
  • Finally garnish it with lots of coriander / cilantro leaves and switch of the flame
  • Serve it hot with rice, roti, idli dosa

Chettinad chicken gravy is very spicy so you can reduce the spice level according to your tasteĀ
