It is one of the spiciest cuisine of India. Chettinad cuisine uses a variety of freshly ground spices like Star aniseed (Anasimooku), Kal paasi, cumin / jeera , fennel, Clove, bay leaf. Coriander seeds and many. Chettinad mushroom masala is spicy mushroom made with freshly ground masala and spices.

There are few mushroom recipes available in this blog which i had shared earlier this blog. This is Mushroom masala goes well with chappati,naan and rice. I make many mushroom gravies and this is the best i can say as this very delicious the addition of coconut makes it more creamier.

This is similar to the chettinad chicken recipe which i had shared earlier but i adjusted few ingredients in this. In this recipe i roasted all the spices with coconut and blended to smooth.

Poppy seed adds nice flavor to the dish but if it not available you can use cashew nuts instead.

Chettinad Mushroom Masala

Chettinad Mushroom Masala / Mushroom Masala recipe / Mushroom gravy / Kalan masala recipes with detailed step step photos. Chettinad food is famous cuisine from Tamilnadu region of South India. It is one of the spiciest cuisine of India. Chettinad cuisine uses a variety of freshly ground spices like Star aniseed (Anasimooku), Kal paasi, cumin / jeera , fennel, Clove, bay leaf. Coriander seeds and many. Chettinad mushroom masala is spicy mushroom made with freshly ground masala and spices.
To make Ground paste
– Dry roast the coriander seeds and set aside
– In the same pan add 1 tsp oil and roast red chili, Fennel, jeera and pepper
– Then poppy seeds and roast for a minute
– Add Shredded coconut and roast it for couple of minutes and switch of flame
– Once mixture cool downs add it to blending jar with some water and blend with to smooth
To make Chettinad Mushroom masala
– Heat a pan with some oil and add Mustard and cumin/jeera and let it splutter
– Then add chopped onion and saute them till they soft and add Ginger garlic paste and saute it
– Add Chili powder and turmeric and saute it
– Now add the chopped tomatoes and cook them till they are mushy
– Then add the cleaned and chopped mushrooms and the ground masala paste
– Add water if required ,cover and cook the mushroom till they are done it takes 10-12 minutes (mushroom tend to oozes out water so add water accordingly )
– Finally garnish it with Coriander leaves and switch of the flame

Ingredients
  

To Ground masala

  • 1 tsp Oil
  • 1 tbsp Coriander
  • 3-4 Red chili
  • 1/2 tsp Pepper
  • 1 tsp Cumin / jeera
  • 1 tsp Fennel / sombu
  • 1 tsp Poppy seeds
  • 2-3 tbsp Shredded coconut

To make Mushroom masala

  • 200 gms Mushroom
  • 2 tbsp Oil
  • 1/2 tsp Mustard
  • 1/2 tsp Cumin/ Jeera
  • 1 Large Onion
  • 1 tsp Ginger garlic paste
  • 1 Large Tomato
  • 1-2 tsp chili powder
  • 1/4 tsp Turmeric
  • Salt
  • Water

Instructions
 

To make Ground paste

  • Dry roast the coriander seeds and set aside

  • Serve Chettinad Mushroom masala with Roti, Paratha or rice

Notes

Chettinad Mushroom masala is very spicy gravy so adjust the spice level according to your taste 
Mushroom tends to leave water so add water accordingly
