Chana masala/chole masala is delicious and flavorful curry prepared with cooked chickpeas and onion tomato based masala. This chana masala goes well with poori, roti, parathas and rice. Chana masala prepared in many different ways and the recipe differs with region as well. The recipe today I shared is perfect restaurant style Chana masala/Chole masala , this recipe is flavorful with whole spices and its very delicious.

Onion and Ginger garlic should be pureed separately and tomato should be pureed separately and then used in curry. I used store bought Chole masala Powder you can use Homemade or alternatively you can use (Chilli powder, Coriander Powder, Cumin powder).

Chana Should be soaked for 8 hours before cooking if you did not soak it, add 5 cups of hot water for 1 cup of channa and keep it for an hour and then use it. But soaking is best You can also make it one pot dish. In this Chana masala recipe I have mashed 3 tbsp boiled channa and added at last. But that is completely optional this gives good taste also thickens the curry. Please also visit my other side-dish recipes.

Chole masala| Punjabi chole| Chickpeas Curry| How to prepare chana masala with detailed step by step photos. Chana masala/chole masala is delicious and flavorful curry. It prepared with cooked chickpeas and also with onion tomato based masala. This chana masala goes with poori, roti, parathas and rice.
– Soak the channa for 8 hour and pressure cook for 5 whistles
– Now take the roughly chopped onion ginger and garlic and make puree and keep aside,in a blender take roughly chopped tomato and make puree
– Heat some oil in a kadai, add cinnamom , bay leave and jeera
– Now add the onion and ginger garlic puree and saute it
– Add chole masala, turmeric and chilli powder and saute it well
– Further add tomato puree and cook till it ozzes out oil
– Add the cooked chana and mix well and add water if required use the stock of chana and cook for 2 minutes on high flame
– When it starts boiling add the mashed channa this is optional and mix well and cover for cook for 5 minutes
– Finally add kasuri methi and garam masala and switch off the flame

Ingredients

  • 1 cup Kabulichanna/vellai sundal
  • 2 no Onion (roughly chopped)
  • 2 no Tomato (roughly chopped)
  • Ginger (small)
  • 5-6 pods Garlic
  • 1/2 tsp Red chilli powder
  • 3 tsp Chana/Chole masala powder
  • 1/4 tsp Turmeric
  • 2 tbsp Oil
  • Cinnamom (small)
  • 1 no Bay leave
  • 1/2 tsp Cumin/jeera
  • Water (as required)
  • Salt (as per taste)

Mashing the cooked chana and adding in curry is optional
