These corn fritters make perfect breakfast. Fresh corn or frozen corn mixed with sour cream, spring onion, egg and cheese and made to thick batter and it is cooked into crispy corn fritters. Corn fritters are fried cakes that are savory. You can include chopped veggies in this batter like carrots, beets and many.
I make regular south Indian breakfast for our daily breakfast but during weekends we try something different. So i tried this recipe long time back and we liked it. so last week when i made it. And I clicked pictures to share in this blog. You can serve these fritters with any sauces, dips or even with sour cream. I served corn fritters with Onion dip.The best part is it requires the basic ingredients and you can make it under 30 minutes all together.
Ingredients to make cheesy corn fritters
Sweet corn
All purpose flour / maida
Egg
Mozzarella cheese
Milk
Spring onions
Pepper
Salt
Few Tips and suggestions
You can use both fresh and frozen corn in this recipe i used frozen corn
This corn fritters can be frozen up to 15 days
You can add grated zucchini or carrots in this Cheesy corn fritters recipe .
Serve this corn fritters with Sour cream or Caramelized onion dip.
Baking powder in this recipe makes it more fluffier but you can skip it.
These corn fritters are cheesy as we use mozzarella cheese in the batter. But you can skip the cheese in this recipe.

Ingredients
- 1 1/2 cup Corn frozen or fresh
- 1/2 cup Spring onions finely chopped
- 3/4 cup All purpose flour
- 1/2 tsp Baking powder optional
- 1/2 cup Mozzarella cheese
- 1 Egg
- 1/8 cup Milk
- Salt
- oil
Instructions
- To make Corn fritters . In a large mixing bowl take the cleaned corn (if using fresh corn boil the corn in water for 3 minutes before adding it to bowl if using frozen take it out from freezer prior 30 minutes and clean it. )
- In a large mixing bowl add corn , all purpose flour(maida), cheese, milk, egg, spring onions and salt
- Mix everything well to a thick batter
- Add ground pepper to the batter and mix well
- Heat a pan on medium to high flame with little oil and now scoop out the batter and add it
- Flip and cook on low to medium flame until its completely cooked
- Serve it hot with Sour cream or Caramelized Onion dip
