Cream of Mushroom soup/ Mushroom soup/How to make cream of mushroom soup with step by step photos. This mushroom soup is full of flavored and delicious soup. This rainy cozy evenings calls for an hot soup yes its raining and too cold in my place and we want is something hot to keep our self warm. sometimes i make any fried foods and mostly soup. I don’t buy ready mix soup packets from store whatever i prepare it myself. This warm mushroom soup with tender bites mushroom is so easy to make and with all available ingredients at home.
I make many soup recipes sometimes non veg soup like chicken soup or mutton leg soup(mutton paya) and the other times vegetable based tomato soup, sweet corn it its our favorite. This cream of mushroom soup is very rich and delicious so it is perfect for any gatherings or for weekend lunch or dinner. A bowl of warm Mushroom soup with toasted bread is our favorite combo.
How the cream of mushroom soup made
There are many ways cream of mushroom soup is made in traditional method roux(all purpose flour and butter are cooked) is cooked first then water and milk are added to it to make a base. then the mushroom are sauteed separately and added in. But I made it one pot which is very easy and yields the same taste.
Mushroom you can use any variety of mushroom i used button mushroom which is easily available for me
Herbs, Usually thyme or parsley is used in this cream of mushroom soup but that is not easily available so iused regular coriander leaves. you can use oregano, rosemary.
Cream you can use any cream like heavy cream, low fat cream or you can use half and half
Flour is used for thickening and to create creamy texture so i used all purpose flour you can also use wheat flour or corn starch mixed with water (slurry)
Cream of mushroom soup(one pot)
Ingredients
- 1-2 tbsp Butter
- 1 small Onion Finely chopped
- 2-3 cloves Garlic Finely chopped or crushed
- 200 gms Mushroom any mushroom of your choice
- Salt as per taste
- Pepper to taste freshly ground
- 2 tsp All purpose flour / maida you can use wheat flour or corn starch
- 1 cup Water or Vegetable stock or mushroom stock
- 1 cup Milk
- 1/4 cup Cream heavy cream / low fat / Whipped cream any cream
- Coriander leaves / parsley Or thyme or basil
Instructions
- In a pan heat butter and add Chopped onion and saute it for 2-3 minutes till it turns soft then add garlic and cook till the raw smell leaves
- Then add chopped mushrooms and salt and saute it till the starts to oozes out water and changes its color
- Now add Crushed black pepper and mix
- Add Water and milk and mix well and check for the salt at this stage, Stir continuously as the mushroom soup gets thicken and may get burnt
- Add cream ( use whipping cream / heavy cream any cream of your choice ) I used low fat cream which is easily available here
- Add Coriander leaves and mix well and cook in low flame for 2-3 minutes and stir well
- Garnish it with coriander leaves and crushed pepper and serve it hot and warm
- Add coriander leaves and mix well and switch of the flame
