I like the plain white sauce pasta and tomato pasta i make it regularly with plain breast toasts. But this baked pasta i made for some guest last week. White sauce baked pasta is loaded with lots of veggies and it will please the veggie lovers. This pasta is creamy extra cheesy and irresistible. Serve this vegetable baked pasta with garlic bread or with plain toasts.
The Ingredients you will need
Pasta – any pasta of your choice i used penne which is easily available
Vegetables – You can add any seasonal veggies of your choice today i used carrots, zucchini, capsicum,sweet corn and onions
Sauce – I used the plain white sauce for this baked pasta
Mozzarella cheese – this makes the cheesy and creamy pasta.
Mixed herbs – you can also use fresh basil or any other fresh herbs
Other ingredients are butter, pepper.
You can make this Vegetable pasta and assemble (without baking) and store it in fridge up to 2 days
To make this pasta for quick meal, Make the sauce ahead and store it in fridge you can store it upto 2 days
You can also use red sauce for this recipe
Easy vegetable baked pasta / Creamy & cheesy pasta

Ingredients
To cook pasta
- 1 cup Pasta any pasta of your choice
- Oil
- Water
- Salt
To make veg pasta
- 1 tbsp Butter or olive oil
- 1/2 Onion finely chopped
- 1 medium Zucchini Chopped
- 1 medium Carrot Chopped
- 1 small capsicum Chopped
- 1/4 cup Sweet corn fresh or frozen
- Crushed black pepper
- Salt as per taste
- Mixed herbs or any herbs of your choice
- Chili flakes
To make White sauce
- 3 tbsp Butter
- 3 tbsp All purpose flour / maida
- 1.5 cup Milk
To assemble and bake pasta
- 1/2 cup Mozzarella cheese
- Chili flakes as required
- Mixed herbs as required
- White sauce (recipe follows)
Instructions
To cook pasta
- Boil pasta with some salt and 1 tsp oil or boil it as per the package instructions
- Drain the water and set aside
To make Creamy cheesy pasta
- Chop all the veggies and set aside
- In pan heat butter add finely chopped onions and saute it till it turns soft
- Then add chopped veggies and saute it and add crushed pepper and salt and cook for 4-5 minutes do not completely cook as the veggies should have crunch in it
- Add the cooked pasta to it and mix well and cook for 2-3 minutes and switch of the flame
To make White sauce
- In pan heat some butter and all purpose flour/ maida and roast it well for about 2-3 minutes
- Slowly add milk and mix it well else it may form lumps and get burnt. mix it continuously for 5 minutes or till the sauce get thickened and add some crushed pepper to it and switch of the flame
Assembling and Baking the pasta
- In baking dish add some white sauce and layer it with veg pasta and sprinkle some pepper and chili flakes
- Top it with some white sauce
- Finally add mozzarella cheese and sprinkle some chili flakes and mixed herbs and bake it in pre heated oven for 20 minutes at 180 degree celsius
- Serve the creamy cheesy veg pasta with garlic bread toasts or with tomato sauce
