Idli podi is mainly from tamilnadu cuisine, it is a dry coarse powder served with Idli, Dosa and Utthapam. It can also be used as a chutney substitute while travelling or for lunch boxes. Idli podi also known as gun powder. Idli milagai podi is made from lentils and red chillies. And Idli podi is mainly mixed with sesame oil or ghee.
There are many variations in making idli podi based on the region like in Andhra cuisine they add coconut to the podi. Additionally sesame seeds, curry leaves, garlic are also added. Today im going to share tamilnadu style idli podi, this recipe is from my mother and I follow the same. I always make idli and keep a stock as it can be used as a substitute to chutney. We can make podi idli and podi dosa(our favourite)from this idli podi
Use good quality lentils and red chilli to get good idli podi. If you’re using curry leaves wash them and dry them before adding. To this idli podi you can add garlic also. Dry the lentils in medium flame till they turn aromatic, do not burn the ingredients.

Ingredients
- 1/2 cup Channa dal
- 1/2 cup Urad dal
- 2 tbsp Sesame seeds
- 10 no. Red chilli
- Salt (as per taste)
- 1 tsp Hing/asafeotidiya
Instructions
- In a kadai dry rost channa dal till it turns aromatic (roast in medium flame)
- Now add urad dal and dry roast till you get aromatic
- Further dry roast sesame seeds till colour changes and popping
- Add red chilli and roast it
- Add all the ingredients in one plate and allow them to cool completely
- Add the roasted ingredients in a grinding jar with salt (as per taste )make a fine powder
- Grind it to fine powder
- Add 1tsp hing/perungayam/asafeotida and mix well store it in airtight container
One of my much favourite powder. Whenever I hear the name idli podi, I remember the taste of its richness which I enjoyed in Ooty. We usually buy it from shop since we don’t know the method of its preparation. Thanks for sharing this recipe. Will definitely prepare it and I’m sure that we don’t buy it from shop the next time 😜
