Mango pickle is so easy to make and taste delicious with curd rice, lemon rice. Traditional raw mango pickle takes lots of effort and time to make it. But this instant pickle can be made effortless and quickly. However this instant mango pickle does not have long shelf life unlike the traditional pickle. In this instant pickle, mustard and methi acts a natural preservative so you can store it up to 1 week in refrigerator.

Raw mango You can choose any variety of raw green mango

Chili powder

Salt

Methi seeds or methi powder

Mustard seeds

Ingredients
  

  • 2 cup Raw mango chopped
  • As required Salt
  • 2 tsp Chili powder
  • 2 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Methi / fenugreek
  • 1/4 tsp Hing

Instructions
 

  • Wash and chop the mango into small pieces
  • Now add salt and chili powder and mix it well with mango and set aside
  • Heat a kadai or pan with oil, add mustard seeds once splutters, add methi seeds or powder , red chili, hing and curry leaves saute it and switch off the flame.
  • Now add the mango pieces to it and mix it well it the tempering
  • Once it cool downs transfer it to glass bottle jar and use it within 1 week

Notes

You can use methi powder or seeds both works well
Use only dry spoon while serving the pickle
