This is very delicious it is soft and moist cake made from fresh juice and zest it has that fresh orange flavour in it. It is best tea time cake. You can pack it for kids snacks box too. Use freshly squeezed juice for the best taste. I used oil in this cake for the extra moisture. Now we are big fan of this cake and we finished half the loaf on the same day.
This cake requires very basic pantry ingredients i used eggs in this recipe. Make sure that all the ingredients are in room temperature before starting to bake.
Preheat the oven for at least 10 minutes before setting the batter Beat the eggs and sugar for good 5 minutes to get soft and spongy cake.
Orange zest is the outer part of the orange (orange peel). Grate it before taking juice from oranges this adds good flavour tot he cake so do not skip it.

Ingredients
- 1 1/4 cup Maida / All purpose flour
- 1&1/4 tsp Baking powder
- 2 Egg
- 3/4 cup Sugar
- 1/2 cup Oil
- 3/4 cup Orange juice
- 2 tbsp Orange zest
- 1/2 tsp Vanilla essence
Instructions
- Firstly Sieve maida / All purpose flour and baking powder together
- Then in large mixing bowl take 2 eggs and 3/4 cup sugar and beat them well with wire whisk or hand mixer whisk till it turns pale and fluffy
- Now add 1/2 cup oil and combine it well with egg mixture
- Add 3/4th cup orange juice, 1 tbsp orange zest, vanilla essence and mix them well till it combines with egg mixture
- Now once again sieve the flour and baking powder mixture to egg mixture
- Combine the flour with egg mixture slowly do not over mix
- Pour to the prepared cake tin
- Bake this in a pre-heated oven for 40 minutes at 180 degree Celsius or till the inserted comes out clean
- Insert a knife or tooth pick if it comes out clean the cake has baked perfectly
- Slice it and enjoy you can store this in airtight container for 2-3 days in room temperature
