Potato Podimas / Potato curry / How to make potato podimas / Potato sabzi recipes with detailed instructions and step by step pictures. Potato is a verstatile vegetable that is adaptable to any recipes . We can make many dishes with potato and all age group likes to eat potato in any form. This potato podimas is very easy and quick to make with few ingredients. it goes well with any south indian main course. I usually make potato podimas to pair it with puli kuzhambu varieties or with sambar rice however you can serve it with roti and chappati.
Potato podimas is south indian side dish recipe, potato can be accompanied with rice, roti or just can be made into any snacks. This potato sabzi requires few ingredients and can be made quickly. You can also try my other potato sabzi recipes which i posted earlier
Ingredients
- 4 medium size Potato
- 1 tbsp Oil
- 1/2 tsp Mustard seeds
- 1 tsp Urad dal
- 2 spring Curry leaves
- 1 medium Onion finely chopped
- Ginger grated
- 3-4 slit Green chili
- 1/4 tsp Asafeotida
- 1/2 tsp Turmeric powder
- as per taste Salt
- Water to boil potatoes
Instructions
- Peel the outer skin of the potatoes and pressure cook them for 2 whistles on high flame
- Take it chop it into small cubes and set aside
- Heat a kadai / pan with oil and add mustard seeds once it splutters add urad dal
- and add curry leaves and onion and saute them till onion turns translucent
- Then add green chilies and ginger and saute them
- Now add turmeric powder and asafoetida and mix it, add the boiled potatoes and mix it well with the onion mixture and cover and cook for 2-3 minutes on medium flame
- Finally add shredded coconut and switch of the flame
- Serve it hot with rice or chappati
