This potato podimas is very easy and quick to make with few ingredients. it goes well with any south indian main course. I usually make potato podimas to pair it with puli kuzhambu varieties or with sambar rice however you can serve it with roti and chappati.

This potato podimas is very easy and quick to make with few ingredients. it goes well with any south indian main course. – Peel the outer skin of the potatoes and pressure cook them for 2 whistles on high flame
– Take it chop it into small cubes and set aside
– Heat a kadai / pan with oil and add mustard seeds once it splutters add urad dal and saute it and add curry leaves and onion and saute them till onion turns translucent
– Then add green chilies and ginger and saute them
– Now add turmeric powder and asafoetida and mix it
– Add the boiled potatoes and mix it well with the onion mixture and cover and cook for 2-3 minutes on medium flame
– Finally garnish it with shredded coconut and switch of the flame

Ingredients
  

  • 4 medium size Potato
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1 tsp Urad dal
  • 2 spring Curry leaves
  • 1 medium Onion finely chopped
  • Ginger grated
  • 3-4 slit Green chili
  • 1/4 tsp Asafeotida
  • 1/2 tsp Turmeric powder
  • as per taste Salt
  • Water to boil potatoes

Instructions
 

  • Peel the outer skin of the potatoes and pressure cook them for 2 whistles on high flame
  • Take it chop it into small cubes and set aside
  • Heat a kadai / pan with oil and add mustard seeds once it splutters add urad dal
  • and add curry leaves and onion and saute them till onion turns translucent
  • Then add green chilies and ginger and saute them
  • Now add turmeric powder and asafoetida and mix it, add the boiled potatoes and mix it well with the onion mixture and cover and cook for 2-3 minutes on medium flame
  • Finally add shredded coconut and switch of the flame
  • Serve it hot with rice or chappati
