Pudalangai Kootu recipe / Snake gourd sabzi / Snake gourd kootu recipe / Kootu recipe / Snake gourd with dal recipe with detailed instructions and step wise picture. Snake gourd, Pudalangai in tamil and padwal in hindi is commonly used vegetable in Indian cuisine. Snake gourd has a strong odor and bland in taste. My mom use to make stir fry (poriyal) and kootu with this vegetable. I like to make kootu with this vegetable, but at times i make poriyal also. When this snake gourd cooked with dal and coconut paste it tastes good.
Pudalangai kootu is very simple to make and required basic pantry staples. You can serve this kootu with rice, roti and also with dosa. I like kootu with rice and puli kuzhambu. Hot rice with puli kuzhambu and kootu wonderful combination.
I try to use organic veggies mostly but that is not possible at all the times so always i wash my veggies in salt and turmeric solution for sometimes this helps to wash out all the pesticides in it.
Always use tender and young snake gourd / pudalangai
Coconut oil enhance the taste of kootu hence try to use coconut oil in this recipe
You can also make kootu recipe with lauki / cabbage in the same method.
Pudalangai Kootu recipe / Snake gourd sabzi
Ingredients
To make ground paste
- 1/4 cup Coconut
- 1 tsp Cumin / Jeera
- 2 Green chili
- 1 Reed chili
- 1 tbsp Fried gram dal
- small piece Ginger
Main ingredients
- 250 gms Snake gourd / Pudalangai
- 1/2 cup Moong dal
- 1/4 tsp Turmeric
- Salt
- Water
To temper
- 1 tbsp Coconut oil
- 1 tsp Mustard
- 2 spring Curry leaves
- 2-3 Red chili
Instructions
To make ground paste
- Add all the ingredients mentioned 'To make Ground paste ' to a blender jar with little jar
- And blend it in to slightly coarse paste and keep it aside
To make Pudalangai / Snake gourd kootu
- Take tender and young snake gourd and peel the skin and discard the seeds and chop it into small pieces
- Now into a pressure cooker add 1/2 cup moong dal, chopped snake gourd, turmeric powder, salt and add water to it and pressure cook for 2 whistles and switch of the flame
- Once the pressure settle down open the cooker and mix the dal and snake gourd / pudalangai once
- Now add the ground coconut paste to the dal and mix it well
- Cook the dal and snake gourd for 4-5 minutes on medium flame
- Finally in a small pan add coconut oil add mustard seedds once it splutters add curry leaves and red chili and add this tadka to dal and switch of the flame
