Pudina rice recipe| Mint rice| Lunch box recipe| How to prepare Pudina Rice with detailed step by step photos recipe. Pudina or mint is a fragrant herb used in Indian cuisine. These pudina rice recipe has lots of medicinal properties hence it is also healthy and rich in nutritious. It is easy one pot dish and can be prepared easily with few ingredients. I did not add any veggies with this pudina variety rice. But you can add veggies as per your choice. And, also I made Onion Cucumber raita to go with pudina rice.
Pudina Rice goes well in lunch boxes, you can prepare pudina rice in pressure cooker as well. But today I have prepared pudina rice with use of a pan. To make it more nutritious please add green peas, potato, carrot and beans. However I did not add any veggies today. Use good quality of rice and soak it for 20 minutes. I have used seeraga samba rice but you can use basmati rice as well.
Pudina Rice is made with blended/grounded coconut, pudina/mint, ginger and garlic mixture, and also add spices to make it more flavourful.
I did not use coriander leaves in Pudina Rice recipe but you can add it to this variety rice (Pudina rice).
Pudina Rice can be prepared with cooked rice like lemon rice and mango rice also.

Pudina Rice| Mint Rice| Mint Pulao
Ingredients
- 1 cup Rice
- 1 cup Pudina/mint
- 1 Onion (large)
- 1 inch Ginger
- 4-5 pods Garlic
- 2-3 tbsp Coconut
- 2 no Green chilli
- 1 tsp Jeera/ Cumin
- Cinnamon (small)
- 3 no Cloves
- 1 no Bay leaves
- 1 no Star aniseed
- 2&1/4 cup Water
- Salt (as per taste)
- 1 tbsp Oil
Instructions
- In blender jar add Mint leaves, Green chilli, Coconut, Ginger & garlic with little water
- Blend it to smooth paste
- In a Pressure cooker or pan heat oil add jeera, cinnamon, bay leaves, Cloves, Staraniseed and fry them for a minute
- Add thinly chopped onions and Curry leaves and saute them till they are transculant
- Now add the grounded pudina mixture and mix well cook till the raw smell goes
- Cook till raw smell goes and till oil separates
- Add 2 cups water and salt and let the water comes to boil
- Add rice and cover the pan for 20 minutes if cooking in pressure cooker cook for 2 whistle and switch of the flame
- Serve hot with raita and enjoy
