Okra / bhindi stir fry is a healthy dish made of okra or ladies finger, onion and with spices. Okra stir fry / ladies finger stir fry is very easy and quick to make because it requires only few ingredients. This bhindi stir fry is so popular dish from Indian cuisine. Both north Indian and south Indian cuisine has so many recipes made out of it. In south India okra is mainly used in curries and gravies like more kuzhambu(butter milk curry with okra), puli kuzhambu(tamarind curry). Bhindi kurkuri bhindi, dahi bhindi, bhindi masala are few dishes from North India.
This okra masala is my favorite and taste best with rotis, phulka or with plain rice. Steamed rice, dal and okra fry is my favorite meal combo and also so comforting food.
Okra stir fry or ladies finger fry takes 15-20 minutes to cook altogether. I buy ladies finger every week as i get fresh okra here. Make sure to use fresh and tender okra/bhindi in recipes. Vendakkai puli kuzhambu / Okra tamarind curry is another popular recipe from south india and its one of my favorite curry.
For this recipe you need not fry okra in oil as it is not required
Do not reduce the oil in this okra stir fry. As oil helps to get rid of the stickiness in okra /bhindi
Okra Stir fry / Bhindi stir fry recipe
Ingredients
- 250 gms Okra / bhindi / vendakai
- 1-2 tbsp Oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin / jeera
- 1 medium Onion Finely chopped
- 2 spring Curry leaves
- 1 tbsp Curry masala or add chili powder, coriander and turmeric
- Salt
Instructions
- Wash the okra and pat dry it using kitchen towel or tissue paper
- Chop them into rounds with chopping both the sides a little
To make okra stir fry
- Heat a pan with some oil and add mustard seeds and cumin / jeera once it crackles add the curry leaves and chopped onions and saute them till they turn soft
- Now add Curry masala powder and saute it quickly
- Then add the Chopped Okra / bhindi
- Add required salt and mix it well and cover and cook for about 10-12 minutes in medium flame
- Okra has been cooked by now and there should be little sliminess left so stir it once and cook for a minute and switch off the flame
- Serve it hot with rice, roti
