It is made of any vegetable (mostly raw banana, potato, onion, brinjal)dipped in gram flour batter and deep fried in oil, bajji with masala chai are the best combination. You can find many street shops selling varieties of bajji in South India. In Tamilnadu raw banana / vazhakai bajji and onion bajji are popular. And in karnataka mirchi bajji one can find many carts selling hot mirchi bajjis and they are super delicious.

This is very easy to make recipe with minimal ingredients and also it cab be made quickly. I usually make vazhakkai bajji and onion bajji at home and i serve it with plain coconut chutney. You can also serve it with ketchup. As i mentioned earlier there are varieties of bajji recipe like vazhakkai bajji, mirchi bajji, onion bajji and brinjal bajji. However raw banana / vazhakkai bajji is very popular in south india and also regularly prepared at many household. This deep fried snack is a must prepare snack during the monsoon season.

Tips

  • Besan is the main ingredient in the batter and we add rice flour to batter to make it even more crispier. My mom always adds a tbsp of fermented dosa batter so the same i follow but its purely optional
  • Always fry bajji in medium flame, it should be neither in low nor high, if you fry them in low flame bajji wont puff up, in high flame it gets cooked only in the outer part and the vegetable remains uncooked
  • Use good quality Besan / gram flour to make bajji
  • You can also use onion, potato, brinjal and mirchi instead of raw banana

– In large mixing bowl take Gram flour / besan, Rice flour, salt, chili powder and hing mix well
– To this add the dosa batter
– Add water slowly and mix it to thick lump free batter
– Peel the raw banana with peeler or knife and cut them to medium slices and meanwhile heat the oil for the deep frying
– Now dip the each banana slices in the batter well ( banana should be coated well )
– Drop it in to hot oil, fry these bajjis in medium flame, flip it to other side fry till it turns golden brown
– Fry these bajjis in medium flame, flip it to other side fry till it turns golden brown
– Serve it hot with chutney or tea

Ingredients
  

  • 1 cup Gram flour / besan
  • 2 tbsp Rice flour
  • 1 tbsp Idli dosa batter optional
  • 2 tsp Chili powder
  • as required Salt
  • 1/4 tsp Hing
  • 1 pinch Baking soda
  • 1 medium size Raw banana / vazhakkai
  • For deep frying Oil

Instructions
