Tandoori chicken is smoky flavored chicken. It is marinated with masalas and spices for hours and then grilled in oven or clay oven or tandoor or in a stove top. Tandoori chicken is one the popular menu in indian restaurants.
Key to get most flavorful tandoori chicken is the marination. Make sure to marinate it for at least 4 hours the more you marinate you get juicy and flavorful chicken. Traditionally tandoori chicken is made by marinating the chicken for long time and then grilling it in clay oven or tandoori to get that smoky flavor. But i dont have clay oven or tandoor so i usually do it in oven.
Ingredients required to make Restaurant style tandoori chicken
Chicken – You can use breast piece , drumsticks or leg with thighs
For marination i have used basic pantry masala like chili powder, garam masala, corinader powder, chicken masala. And i have not used any artificial color in this recipe, the bright color comes from kashmiri chili powder. Marinate the chicken for atleast 4 hours i usually do it over night
Curd, use only thick and fresh curd, hung curd or greek yogurt both works well, i have used homemade hung curd.
Oil, mustard oil is best to make tandoori chicken however you can use any vegetable oil or butter myself used only butter as i did not have mustard oil at the time.

Ingredients
To make tandoori chicken
- 2 Chicken legs
For first marinade
- 1/4 tsp Chili powder
- 1/4 tsp Pepper optional
- 1 tbsp Lemon juice
For second marinade
- 1/4 cup Hung curd or Greek yogurt
- 1 tbsp Ginger garlic paste
- 1 tsp Kashmiri chili powder
- 1/4 tsp Garam masala
- 1/2 tsp Chicken masala
- 1/4 tsp Turmeric powder
- 4 tbsp Oil or butter Preferably mustard oil
- 2 tsp Salt
Instructions
To marinate the chicken
- Wash and clean the chicken legs and make cuts on the chicken with a sharp knife this helps to absorb the masala
- Rub the lemon juice well on the chicken legs
- Then add pepper powder and chili powder and rub it well on the chicken, cover it and keep it in fridge for 30 minutes
Second marination
- For second marination, In bowl take hung curd, chili powder, garam masala, chicken masala, ginger garlic paste and salt and mix it well
- Now marinate the chicken well till it reaches deep inside
- Cover the marinated chicken and rest it in fridge overnight or minimum 4 hours and take the chicken outside the fridge prior 30 minutes before cooking
To Make tandoori chicken
- Heat a pan with butter or mustard oil
- Place the marinated chicken on the pan and cook it on medium to high heat
- Flip the chicken and cook on the both sides
- Flip them again and cook till the chicken is completely cooked (At this stage you can place a piece of live charcoal and pour some ghee over it and cover it for 5-10 minutes to get smoky flavor )
- Serve it hot with green chutney or mayo
