White kurma/ vellai kurma is a South indian veg gravy in which the mix of vegetables like potato, carrot, peas beans are cooked in coconut based gravy. This gravy is white in color as there no chili powder or other masala powder added in this gravy. Vellai kurma/ white kurma is also known as hotel kurma because this White veg kurma is very famous in one of eatery chains of saravana bhavan hotel in tamilnadu. They serve super delicious white veg kurma. There are varieties of kurma available in south indian cuisine mainly from tamil cuisine.
Vegetable kurma – I make this quite regularly as this is my husband’s favorite. The other version of veg kurma uses chili powder and tomato in it. And i had shared it earlier in the blog, However the taste also differs from from each kurma. You can serve this White Vegetable kurma with Chappati, Pori, parotta or with any Indian flat breads.
Few Tips and suggestions
To make Restaurant style veg kurma we have to prepare a ground coconut masala with Coconut, Poppy seeds, Green chili, Cashews, Fried gram dal (pottukadalai), cinnamon, cloves and fennel. To get the authentic taste do not skip any ingredients except poppy seeds.
I made this kurma in a open pan but to cut the cooking time you can make in pressure cooker or in instant pot.
You can also boil the veggies ahead and keep it, so you can make it quickly within few minutes

White kurma recipe /Restaurant style veg kurma recipe
Ingredients
- 2 tbsp Coconut oil or any other oil
- 1 Bay leaf
- 1 tsp Jeera
- 1 medium Onions sliced
- 1/2 cup Carrot Chopped
- 1/4 cup Beans chopped
- 1/2 cup Green peas fresh or frozen
- 1 Medium Potato
- Salt
- 1.5-2 cups Water
To Grind (Coconut paste)
- 1 cup Shredded Coconut
- 8-10 Cashews
- 1 tsp Poppy seeds
- 1 small piece Ginger
- 4 cloves Garlic
- 3 Green chili
- 1 small Cinnamon
- 4 Cloves
- 1 tsp Fennel/sombu
Instructions
To make ground masala
- Take all the ingredients mentioned under to grind in a blender jar with little water , blend it to smooth
- Blend it to smooth
To make White kurma / vellai kurma
- Heat a pan with some coconut oil add Bay leaf and cumin/ jeera, and saute it briefly and add sliced onions and saute till they are transparent
- Add in the chopped vegetables and saute it for 2 minutes
- Pour 1.5 cups water add salt cook for 7-8 minutes on medium flame do not over cook the veggies
- Then add the ground coconut paste mix well, boil for 3-4 minutes on low to medium flame
- Finally garnish it with Coriander leaves and switch of the flame
