There are different types of murukku varieties. During festival time we share sweets and snacks with friends and family. Mainly during diwali time murukku is must for us. So my mom makes murukku and badusha for every diwali other menu may change but this combination will not. And my mom makes snacks in a large quantities and we share it. My mom always makes these festival snacks at home and she never buys it from outside. she makes wonderful murukku and mixture.
There are varieties of murukku or chakli recipe based on the region the ingredient differs. I had shared butter murukku and Karnataka famous kodubale in this blog. The best part about this thenkuzhal murukku is the pacha murukku ( half cooked) the last batch is always half cooked or fried and that taste great. You can also add some chili powder and make it as kara thenkuzhal. Nowdays i make this type of dry snacks for us and store it for a week.
You can use store bought rice flour or idiyappam flour and the same you can use store bought urad dal flour also. When your dropping the murukku oil should be hot and cook the murrku on medium flame. You skip cumin/jeera in this recipe.

Thenkuzhal murukku recipe
Equipment
- Murukku press
Ingredients
- 2 cup Rice flour
- 1/2 cup Urad dal flour
- 2 tsp Cumin / jeera
- pinch Hing
- Salt
- For frying Oil + 2 tbsp for kneading
- Water
Instructions
- In a kadai dry roast the urad dal till it turns aromatic it takes 4-5 minutes
- Add the urad dal to a mixie jar and grind it to fine powder
- In a large mixing bowl take 2 cups rice flour
- Sieve the urad dal flour and add to the rice flour and add salt, cumin and hing
- Add hot oil to the rice flour mixture and mix it with spoon
- Slowly add water and knead it to smooth dough
- Take the murukku achu ( shape ) which has holes in it like i have shown in picture
- Fill it the dough and cover it
- You can directly press the murukku in to oil but you may feel the heat from the oil so press them in a parchment paper or plastic sheet and Drop in oil one by one
- Drop the murukku in hot oil and fry them on medium flame
- Take it out once they are done
- Store it in airtight container . you can store it for 1 week
