In north Indian curries / gravies the curd or yogurt is added. Vegetable kurma/Veg korma is perfect to serve with parotta, roti, idli and dosa. My mom makes delicious kurma and i follow her recipe.
You can add any veggies to vegatable kurma recipe. In this recipe I have used carrot, cauliflower, beans and potato. You can also add green peas. And coconut paste is added in to this recipe. This recipe you can will find this veg kurma in all south indian restaurants.
Veg kurma taste great with parotta , naan, chapathi and dosa. There are many kurma varities in south Indian cuisine. Like white kurma, soodi and many and this is one such recipe with whole spices in it. You can make this kurma in pressure cooker to save time. Ground coconut paste( blend the coconut, poppy seeds, roasted chana dal(pottukadalai), cashew and fennel seeds) makes this kurma flavourful and tastes too good.. Poppy seeds gives nice flavour to this kurma. Veg kurma can be made during special occasions as it is rich in its taste.

Ingredients
- 2 medium Onion
- 2 medium Tomato
- 1 tbsp Ginger Garlic paste
- 1 tbsp Chili powder
- 1 tbsp Coriander powder
- 1/4 tsp Turmeric
- small Cinnamon
- 2 Cloves
- 1 tsp Jeera
- 1 Star aniseed
- 2-3 tbsp Oil
- Water
- Salt
For Ground coconut paste
- 1/2 cup Coconut
- few Cashews
- 1 tbsp Roasted chana dal / pottukadalai
- 1 tsp Poppy seeds / khus khus
- 1 tsp Fennel/sombu
Veggies for kurma
- Carrot
- Potato
- Cauliflower
- Beans
Instructions
For coconut
- Take coconut, Cashews, poppy seeds and roasted gram dal in mixie jar and little water and grind it
- Grind it to smooth and set aside
For Kurma
- Heat some oil in a kadai add Cinnamon, cloves, star aniseed and Jeera saute till it turns aromatic
- Now add chopped onion and saute it till it turns translucent
- Now add ginger garlic paste and saute it till raw smell goes
- Add chopped tomato and cook till it turns soft
- Add chili powder, coriander powder and turmeric and saute it
- Now add all the vegetables and mix well and saute for 2-3 minutes in low flame
- Add water and salt to the veggies and stir well and cover and cook till the veggies for 10 minutes in low flame
- Now add ground coconut paste and mix well with the curry
- Now cover the kurma and cook till the veggies are done
- Finally add chopped coriander leaves and switch of the flame
- Serve vegetable kurma hot with parotta, naan, roti
