People get confused with white veg kurma and veg stew recipe. But both are totally different in cooking method and taste wise. White veg kurma is cooked with fresh coconut whereas veg stew is cooked with coconut milk and veg kurma is even more spicier than veg stew. You can check my white veg kurma here. You can use vegetables like carrot, potato, peas, beans and cauliflower. Since i did not have cauliflower in hand i skipped it. If you have readymade coconut milk in hand then veg stew recipe takes only 15-20 minutes. In our home we all like stew with idiyappam, However you can also serve it with idli dosa and chappathi.

Ingredients
- 1/4 cup Carrot
- 1/4 cup Beans
- 1/4 cup Potato
- 1/4 cup Peas Fresh or frozen
- 1 tbsp Coconut oil
- 1 Bay leaf
- small Cinnamon
- 3 Cloves
- 1 Cardamom
- 1 medium Onion Finely sliced
- 2 spring Curry leaf
- 2 Green chili
- Ginger
- 1 1/2 cup Coconut milk thin
- 1/2 cup Coconut milk Thick
- Salt
- Water
Instructions
- In a heavy bottomed pan heat some coconut oil and add the whole spices to it and saute it for a minute and add the sliced onions and saute them till they turn translucent
- Now add the slit green chili and chopped ginger
- Then add the veggies with 1/4 cup water and add salt and cover and cook them on high flame till they are half cooked
- Now add thin coconut milk and cover and cook till the veggies are completely cooked
- Finally add Thick coconut milk and 1 tsp coconut oil and switch off the flame. do not cook further as stew may curdle.
- Serve it hot with appam or idli dosa
