Paneer is a Indian cottage cheese and we use it to make many dishes like kheer, gravies, sweets and many. Kadai is like a wok or pan and we use it for deep fry and also for stir fry and this dish is made on the kadai it is known as kadai paneer. This is one of the dish which is found on all the Indian restaurant. Paneer and capsicum or bell pepper are the main ingredients in this dish. We have to make a special masala for this kadai paneer which is known as kadai masala.For kadai masala- Dry roast Chili, Coriander, Cumin, Pepper till they turn aromatic on medium flame- Add that to a blending jar and blend it to a fine powderTo make kadai paneer- Heat a kadai with some oil and add roughly chopped onion , Ginger and garlic and saute it till the onion turns translucent- Then add chopped tomatoes and cook them till they are soft- Add the Onion tomato mixture and add cashews to blending jar- Blend them to a smooth paste and set aside- Now in the same kadai heat some oil and add cubed capsicum and onion and fry them and take out- Saute the paneer for 2 minutes and take it out- Now add some oil and add Cumin, Bay leaf and cinnamon- Add Chili powder, and ground kadai masala and saute them quickly in low flame- Then add the ground Onion tomato mixture and Stir it add water if required- Now add the fried capsicum, onion and paneer and mix it and cover and cook for 5 minutes- Finally add kasuri methi and garam masala and switch of the flame- Serve it hot with Roti or naan

To make kadai paneer
Heat a kadai with some oil and add roughly chopped onion , Ginger and garlic and saute it till the onion turns translucent
Then add chopped tomatoes and cook them till they are soft
Add the Onion tomato mixture and add cashews to blending jar , Blend them to a smooth paste and set aside
Now in the same kadai heat some oil and add Cubed capsicum and onion and fry them and take out
Saute the paneer for 2 minutes and take it out
Now add some oil and add Cumin, Bay leaf and cinnamon and saute and then add Chili powder, and ground kadai masala and saute them quickly in low flame
Then add the ground Onion tomato mixture and salt and Stir it add water if required
Now add the fried capsicum, onion and paneer and mix it and cover and cook for 5 minutes
Finally add kasuri methi and garam masala and switch of the flame
Serve it hot with Roti or naan

Adjust the spices according to your taste You can add cloves and cinnamon to kadai masala Do add ginger julienne to add nice flavour to the recipe You can replace paneer with tofuFor creamier version add fresh cream and cashews
