Prawns Biryani recipe / Shrimp Dum Biryani / Dum biryani recipes/ Prawns dum biryani / Eral biryani recipe with detailed step by step photos. With detailed step by step photos. Dum cooking refers to letting the dish cook on its steam so it makes the recipe aromatic and delicious. Biryani is a delicious dish made with basmati rice or other variety of biryani rice with chicken, mutton and also veggies. Prawns Biryani - basmati rice dum cooked with whole spices, prawns and masalas to perfection. This is known as Jingga Biryani in India. In this Prawns is in spicy gravy and layered with aromatic basmati rice and fried onions and cooked on dum process.
To Marinate the prawns
- In a bowl take the cleaned prawns and add salt, Lemon juice, and turmeric powder and marinate and set aside
To make Biryani rice
- In pan Heat the water and add salt, ghee, whole spices , and coriander mint leaves (optional) and once the water comes to boil add rice and cook till 90 percent done.
- Strain the rice through a colander and set aside
To make Prawn Biryani gravy
- In a heavy bottom pan heat ghee and oil add Cinnamon, cardamom, jeera/cumin, Star aniseed, mace and cloves and saute it quickly
- Now add Sliced onions and saute them till they turn golden
- Then add ginger garlic paste, Mint and coriander leaves and saute them till the raw smell goes
- Add chili powder, turmeric, biryani masala and garam masala and saute for a minute
- Add the chopped tomatoes cook them till they are soft and add curd and mix well (you can also add coconut milk)
- Now add the marinated prawns
- Cook on medium flame until its cooked it takes 4-5 minutes. Prawns curl up to c when they are cooked.
Layering the Biryani
- Transfer the gravy to a bowl and In the same pot layer half the cooked rice
- Next layer the Biryani gravy
- Again layer the remaining rice
- Now sprinkle the fried onions, ghee, saffron milk(optional) mint and coriander leaves
- Cover it with a plate and place a heavy object on the top (i kept my small iron kadai) and put for dum on very low flame for 15 minutes and switch of the flame and allow it to rest for 10 minutes after the dum process.
- The rice has cooked perfectly do not mix the biryani as rice tends to break.
- Serve it hot with raita or Biryani gravy

Ingredients
  

For marination

  • 500 gms Prawns

For Prawns biriyani rice

  • 1.5 cups Basmati rice
  • 1 tsp Ghee
  • Salt
  • Water
  • small Cinnamon
  • 1 Cardamom
  • 1 tsp Jeera
  • 1 tbsp Mint Leaves (optional)
  • 1 tbsp Coriander leaves (optional)

For making prawns biryani gravy

  • 2 tbsp Oil
  • 2 tbsp Ghee
  • 1 stick Cinnamon
  • 1 Cardamom
  • 1 Star aniseed
  • 2 Cloves
  • small Mace
  • 1 tsp Jeera / cumin
  • 2 medium Onion
  • 1 tbsp Ginger garlic paste
  • Coriander leaves
  • Mint leaves
  • 1 tsp Chili powder
  • 2 tsp Biryani masala
  • 1/4 tsp Turmeric
  • 1 medium Tomato
  • 2 tbsp Curd
  • Salt

Instructions
 

To Marinate the prawns

Notes

Adjust the spice level according to your taste 
Choose good quality aged basmati rice 
You can substitute coconut milk with curd
Do not over cook the prawns
