Pita bread is a round flat breads made with flour and yeast mixture and its common in Mediterranean and middle east cuisine.. This is usually made with wheat flour, but you can use either maida or both the flours. pita bread is very pupular for its pita pockets where we can stuff tahini, falaffel, hummus or with meat. You can toast the pita bread and serve it with hummus i like this combo or I make pita bread for sharwarma usually.

Ingredients
  

  • 2 tsp Active dry yeast
  • 1 cup Warm water
  • 1 tsp Sugar
  • 1.5 cup All purpose flour / Maida
  • 1.5 cup Wheat flour
  • 1 tbsp Olive oil you can use any oil
  • 1 tsp Salt

Instructions
 

  • To activate the yeast, In a bowl take warm water add sugar and yeast and stir it and set aside for 10 minutes. This mixture will bubble and foam so the yeast has been activated
  • In a large mixing bowl take All purpose flour/ maida, salt, olive oil and add the yeast mixture
  • Start to knead the dough, knead it well for good 5 minutes and cover and rest the dough till it doubled in its size
  • Now the dough had doubled, knead it once again
  • Dust some flour in the workspace and take a small ball sized dough and roll it
  • Roll it to flat (like chappati) about 1/4 inch approx, similarly make all the remaining dough

To make in stove top

  • Heat a iron skillet and place the prepared pita bread on medium heat
  • And cook till the bread puff up and bottom has brown spots then flip to other side cook. once it has cooked completely take it out and keep in cloth covered this helps retain the softness

To make it in Oven

  • Pre heat the oven for 10 minutes with the tray in it
  • Take the tray carefully as it may be very hot. now place the pita bread on the tray i placed 2 at a time
  • Cook for 10-12 minutes at 180 degree c. it will puff up nicely you can see in the picture.
  • take it out once it cooked completely
  • Serve it with falaffel or make shawarma

Notes

If using instant yeast you can add it directly tot he flour 
Water should be warm neither hot nor cold
You can make pita bread completely with  whole wheat flour or maida
