Chicken sukka is one of the most easy recipe that goes well with rice, roti, paratha. Chicken sukka is popular recipe from mangalore & konkan region of southern India. Sukka is nothing but dry masala, this is flavorful dish made with chicken, whole spices and few herbs.

To marinate the chicken
- 500 gms Chicken
- 1 tsp Chili powder
- ¼ tsp Turmeric powder
- 1 tsp Garam masala
- 1 tsp Chicken masala optional
- ½ tsp Ginger garlic paste
- Salt
- ¼ cup Fried onions optional
To make ground masala
- 1 inch Cinnamon
- 1 tsp Fennel
- 1 tbsp Coriander seeds
- 3 Cloves
- 2 Cardamom
- 4-5 Dried red chili
- 3 tbsp Coconut
To make chicken sukka
- 2 tbsp Oil preferably coconut oil
- 1 tsp Cumin / jeera
- 1 Bay leaf
- ½ cup Onion Finely chopped
- 2 spring Curry leaves
- 1 tbsp Ginger garlic paste
- ½ cup Tomato finely chopped
- salt
- 2-3 tbsp water
To marinate the chicken
In a large bowl add chicken pieces, chili powder, garam masal, chicken masala, turmeric and fried onions
Rub it well the chicken, mix it all cover and rest it for 30-45 min
To make ground masala
In pan dry roast coriander seeds, fennel, cinnamon, dried red chili on medium till it turns aromatic
Add shredded coconut and roast it for another 2 minutes and switch of the flame
Allow it to cool and grind it to slightly coarse powder
To make chicken sukka
Heat a pan with coconut oil, add cumin / jeera, bay leaf and curry leaves and saute it for 20 - 25 seconds
Add finely chopped onion and fry till it is transparent to golden
Add fresh ginger garlic paste and fry it till it turns aromatic
Then add finely chopped tomatoes, salt and cook till it is soft and mushy
Add the marinated chicken pieces and give it a good mix
Then cover and cook in medium heat for 5 minutes
If masala becomes too dry then add 1/4 cup water and mix it cook
When the chicken is half cooked add the fresh ground masala powder and mix it well so that masala powder has to coat the chicken completely
Again cover and cook on medium flame for8-10 minutes or till the chicken is completely cooked
Use good quality spices
I prefer coconut oil for this chicken sukka but you can use any cooking oil
Adjust the spice level according to your taste
Do not add more water if required just add less than 1/4 cup
Fried onions add nice taste and gives good flavor but you can skip if you don't want to add
