Pudina rice recipe| Mint rice| How to prepare Pudina Rice with detailed step by step photos recipe. Pudina or mint is a fragrant herb used in Indian cuisine. These pudina has lots of medicinal properties hence it is also healthy and rich in nutritious. It is easy one pot dish and can be prepared easily with few ingredients. I did not add any veggies with this variety rice. But you can add veggies as per your choice. And, also I made Onion Cucumber raita to go with pudina rice.
- In blender jar add Mint leaves, Green chilli, Coconut, Ginger & garlic with little water
- Blend it to smooth paste
- In a Pressure cooker or pan heat oil add jeera, cinnamon, bay leaves, Cloves, Staraniseed and fry them for a minute
- Add thinly chopped onions and Curry leaves and saute them till they are transculant
- Now add the grounded pudina mixture and mix well cook till the raw smell goes
- Cook till raw smell goes and till oil separates
- Add 2 cups water and salt and let the water comes to boil
- Add rice and cover the pan for 20 minutes if cooking in pressure cooker cook for 2 whistle and switch of the flame
- Serve hot with raita and enjoy

Ingredients
  

  • 1 cup Rice
  • 1 cup Pudina/mint
  • 1 Onion (large)
  • 1 inch Ginger
  • 4-5 pods Garlic
  • 2-3 tbsp Coconut
  • 2 no Green chilli
  • 1 tsp Jeera/ Cumin
  • Cinnamon (small)
  • 3 no Cloves
  • 1 no Bay leaves
  • 1 no Star aniseed
  • 2&1/4 cup Water
  • Salt (as per taste)
  • 1 tbsp Oil

Instructions

Notes

You can adjust the spice level according to your taste
You can add veggies like carrot, peas and beans
I made it with seeragasamba rice but you can add basmati rice also
You can cook the rice first and then mix with the pudina onion mixture
I have added 2 cups water for 1 cup seeraga samba rice you add according to the variety of rice your usingĀ
