Heat some oil in a kadai add Cinnamon, cloves, star aniseed and Jeera saute till it turns aromatic
Now add chopped onion and saute it till it turns translucent
Now add ginger garlic paste and saute it till raw smell goes
Add chopped tomato and cook till it turns soft
Add chili powder, coriander powder and turmeric and saute it
Now add all the vegetables and mix well and saute for 2-3 minutes in low flame
Add water and salt to the veggies and stir well and cover and cook till the veggies for 10 minutes in low flame
Now add ground coconut paste and mix well with the curry
Now cover the kurma and cook till the veggies are done
Finally add chopped coriander leaves and switch of the flame
Serve vegetable kurma hot with parotta, naan, roti
