White kurma recipe / Vegetable white kurma / Restaurant style veg kurma recipe / How to make veg kurma recipe. with detailed step by step photos. White kurma/ vellai kurma is a South indian veg gravy in which the mix of vegetables like potato, carrot, peas beans are cooked in coconut based gravy. This gravy is white in color as there no chili powder or other masala powder added in this gravy. Vellai kurma/ white kurma is also known as hotel kurma because this White veg kurma is very famous in one of eatery chains of saravana bhavan hotel in tamilnadu. They serve super delicious white veg kurma. There are varieties of kurma available in south indian cuisine mainly from tamil cuisine.
To make ground masala:
- Take all the ingredients mentioned under to grind in a blender jar with little water , blend it to smooth
- Blend it to smooth
To make White kurma / vellai kurma:
- Heat a pan with some coconut oil add Bay leaf and cumin/ jeera, and saute it briefly and add sliced onions and saute till they are transparent
- Add in the chopped vegetables and saute it for 2 minutes
- Pour 1.5 cups water add salt cook for 7-8 minutes on medium flame do not over cook the veggies
- Then add the ground coconut paste mix well, boil for 3-4 minutes on low to medium flame
- Finally garnish it with Coriander leaves and switch of the flame

Ingredients
  

  • 2 tbsp Coconut oil or any other oil
  • 1 Bay leaf
  • 1 tsp Jeera
  • 1 medium Onions sliced
  • 1/2 cup Carrot Chopped
  • 1/4 cup Beans chopped
  • 1/2 cup Green peas fresh or frozen
  • 1 Medium Potato
  • Salt
  • 1.5-2 cups Water

To Grind (Coconut paste)

  • 1 cup Shredded Coconut
  • 8-10 Cashews
  • 1 tsp Poppy seeds
  • 1 small piece Ginger
  • 4 cloves Garlic
  • 3 Green chili
  • 1 small Cinnamon
  • 4 Cloves
  • 1 tsp Fennel/sombu

Instructions

Notes

Coconut oil gives good taste to the kurma but you can use any other oil
You can also make this kurma in Pressure cooker   to cut down the time of cooking process
You can boil the veggies ahead and keep and you can add it to this kurma 
You can adjust the spice level according to your taste
