Firstly in a large mixing bowl take 1 cup All purpose flour / Maida, salt and turmeric powder
Now slowly add water and knead it to smooth dough and cover and rest it for 15 minutes
Meanwhile, take a small bowl add the rice flour and ghee and mix it to make smooth paste
Now take small ball size dough and dust some flour and roll it using rolling pin
Roll it as thin as possible, and similarly roll all the balls
Now apply the prepared rice flour paste evenly
Place the another rolled sheet and apply the rice flour paste
Similarly layer all the rolled sheets
Now roll it tightly into a log shape cut it into 1 inch pieces and press it slightly
You should be able to see the layers
Slightly roll each pieces using rolling pin
Drop the kajas in hot oil and flip them gently and fry on the other side, by this time layers separate, fry them in medium to low flame
Take them out once it turns crispy
