Madakku sweet / Madatha kaja recipe / khaja recipe with detailed instruction and step by step photos. kaja is a popular sweet recipe in Tamilnadu, it is made of Maida/ all purpose flour and sugar as main ingredients. These layers are deep fried and then those fritters are dunked in sugar syrup. This sweet has many layers so typically it is called as madakku (means fold) sweet. Usually this khaja is prepared during festival times and it tastes delicious. Madakku sweet requires only 3 main ingredients however the preparation takes some time as you have roll the dough and layer each rolls and deep fry them.

Few Tips on how to make perfect madakku sweet

  • Do not use any oil or butter while kneading the dough
  • Roll the sheets as thin as possible
  • Ghee and rice flour paste plays the main role in in getting the layers so apply rice flour paste generously between each sheets
  • Roll it into tight log and cut them into 1 inch pieces
  • Fry madakku sweet in low to medium flame

– Firstly in a large mixing bowl take 1 cup All purpose flour / Maida, salt and turmeric powder
– Now slowly add water and knead it to smooth dough and cover and rest it for 15 minutes
– Meanwhile, take a small bowl add the rice flour and ghee and mix it to make smooth paste
– Now take small ball size dough and dust some flour and roll it using rolling pin
– Roll it as thin as possible, and similarly roll all the balls
– Now apply the prepared rice flour paste evenly
– Place the another rolled sheet and apply the rice flour paste
– Similarly make all the rolled sheets
– Now roll it tightly into a log shape
– Cut it into 1 inch pieces and press it slightly
– Slightly roll each pieces using rolling pin
– Drop the kajas in hot oil and flip them gently and fry on the other side,
– By this time layers separate, fry them in medium to low flame
– Take them out once it turns crispy
Soaking in sugar syrup
– In a large pan take 1/2 cup sugar and 1/4 water and bring them to boil and add cardamom powder to flavor, Once the syrup turns sticky switch of the flame
– Do not make 1 string consistency suagr syrup
– Drop the madakku sweets in hot sugar syrup and flip it and take out( do not allow it soak in sugar syrup
– Store the left over madakku sweets / khaja in air tight container

Ingredients
  

  • 1 cup Maida / all purpose flour
  • 1/4 tsp Turmeric powder or yellow food color or orange food color
  • Oil for deep frying

To make rice flour paste

  • 3 tbsp Rice flour
  • 2 tbsp Ghee

To make sugar syrup

  • 1/2 cup Sugar
  • 1/4 cup Water
  • 1/4 tsp Cardamom powder

Instructions
 

  • Firstly in a large mixing bowl take 1 cup All purpose flour / Maida, salt and turmeric powder
  • Now slowly add water and knead it to smooth dough and cover and rest it for 15 minutes
  • Meanwhile, take a small bowl add the rice flour and ghee and mix it to make smooth paste
  • Now take small ball size dough and dust some flour and roll it using rolling pin
  • Roll it as thin as possible, and similarly roll all the balls
  • Now apply the prepared rice flour paste evenly
  • Place the another rolled sheet and apply the rice flour paste
  • Similarly layer all the rolled sheets
  • Now roll it tightly into a log shape cut it into 1 inch pieces and press it slightly
  • You should be able to see the layers
  • Slightly roll each pieces using rolling pin
  • Drop the kajas in hot oil and flip them gently and fry on the other side, by this time layers separate, fry them in medium to low flame

Notes

You can add yellow food color or orange food color instead of turmeric powder
You have roll the sheet as thing as possibleĀ 
Apply the rice flour and ghee mixture generously over each each sheets
Roll them to a tight log and cut it into 1 inch piecesĀ
