Hummus is a spread or a dip made with chickpea, Tahini paste (sesame seeds), lemon and olive oil. It is from Mediterranean cuisine. Its commonly eaten in middle east.Today i will show how to make Hummus from scratch. You can serve hummus with Pita bread, or with salad or with vegetables. Hummus with homemade tahini is easy to prepare with few ingredients. You can make Hummus without tahini also just skip the tahini paste in the recipe but however tahini makes it more delicious. Tahini is nothing but roasted seasme seed paste. Today i covered tahini recipe also i always make tahini at home and i never tried store bought tahini.
Hummus with homemade tahini-I made hummus with pressure cooked chickpeas. I soaked it for 8 hours then pressure cooked it. This is classic hummus with no artificial flavors. I made this hummus with Mixie jar and the end result is same as you get in food processor but have to blend it for few extra minutes.
How to cook Chickpea
Soak Chickpea/ garbanzo beans for 8 hours or over night and pressure cook it with some water and baking soda for 6-7 whisltles or cook chickpea in Instant pot.
Ingredients for Hummus
Chickpea is the star of the recipe you can use chickpea either with skin or without . To get that extra creamy Hummus use chickpea without skin. cook the chickpea and just rub it with your fingers so that you can peel the skin easily
Tahini is a nutty and slightly bitter paste made of roasted seasame seeds
Garlic gives nice flavour and taste in hummus but do not add more
Fresh lemon juice adds good tangy taste to the hummus
Extra virgin olive oil we drizzle it over the hummus while serving
Cumin / jeera powder gives nice flavour and taste but this is optional i like this in my hummus.
Hummus with homemade Tahini
Ingredients
- 1 cup Cooked chickpea / Kabuli channa /Garbanzo beans
- 1/3 cup Tahini paste recipe follows
- 2 Garlic cloves Minced
- 3 tbsp Lemon juice add more if required
- 1/4 cup Extra virgin Olive oil more for garnishing
- a pinch Cumin powder / jeera powder optional
- 1 tbsp Cold water / water from cooked chickpea I used chickpea water
- a pinch of Salt
Tahini paste
- 1 cup Sesame seeds
- 2-3 tbsp Oil any flavor less oil
Instructions
To make tahini paste
- Dry roast the sesame seeds on medium flame for 5 minutes and switch of the flame
- Once it cool downs add it to a blender jar with some oil and blend it to smooth with intervals
To make classic Hummus
- Soak the chickpea for 8 hours and cook it in a pressure cooker with 1/4 tsp baking soda and water for 5-6 whistles and allow it to cool completely
- Take a cooked chickpea and rub it with finger to peel the skin easily ( if you are making hummus with skin then skip this step)
- In a blender or food processor take tahini paste and lemon juice and blend it untill smooth
- Now add Chickpea, Garlic cloves, salt and little olive oil and blend it for a minute
- Add all the olive oil, ground cumin/ jeera and chickpea cooked water(stock) and blend it again for 4-5 minutes or until smooth and creamy
- Creamy Hummus is ready to be served
