Oats are whole grain and it takes long time to cook hence mostly rolled oats, steel cut oats or instant oats are used to make porridges this cuts the cooking time. Instant oats are the most processed oats which takes only 2-3 minutes cook.

Steel cut oats take long time to cook and has a chewy texture.
I usually prefer old fashioned rolled oats for this. This cooks faster than the steel cut oats while still retaining its shape.
Instant oats are highly processed hence it take only 3-4 minutes to cook.
I make oatmeal porridge with regular milk or with coconut milk quite regularly for our breakfast. I add available fruits to the porridge this not only makes it tasty but also healthy.

Ingredients
To make coconut milk oats porridge
- Oatmeal rolled oats, instant oats or steelcut oats
- Coconut milk
- Water
- Salt
- Cinnamon powder or cardamom powder
- Sugar
Instructions
To make coconut milk oats porridge
- Wash oats and soak it for about 15 minutes in cold water and drain it
- Pour water to a pot and bring it o boil and add soaked oats (if using steel cut oats soak it over night ) if using instant oats directly cook in coconut milk for 3-4 minutes
- Stir it and simmer for 7-8 minutes
- Once the water is absorbed add coconut milk and stir it,
- Then add cinnamon powder and sugar (if adding ) and mix it well
- Now close the lid and simmer for 2 minutes
- Once the oats is cooked to desired consistency switch of the flame (Oatmeal thickness upon cooling hence switch of the flame when it slightly runny in consistency)
- Top it with fresh fruits & nuts and serve warm
