In a bowl sift flour, baking powder, baking soda, salt, cardamom powder, cinnamon powder and dry ginger powder, then set it aside
To the soaked dry fruits add 2 tbsp flour and mix it this helps to spread the fruits evenly without settling in bottom
In a large mixing bowl take butter and sugar beat it till they turn pale and fluffy
Add eggs and beat it (one at a time ) till fluffy incorporated
Add in vanilla and mix it
Now add half of the flour mix and half of the caramel(which we made earlier) and cut, fold and mix, and continue with remaining flour and caramel and mix it well
Now comes the main ingredient the soaked dry fruits
Add the soaked fruits and nuts to the batter
Pour it to baking tray and bake it at 180 degree for 45 minutes
Take it out once the inserted comes out clean
Allow it to cool
Dust some icing sugar on top and serve it
