The dark color in the plum cake comes from the dark caramel and not from any cocoa powder. Making caramel syrup may be little crucial, if it gets burnt whole cake will be ruined.
Few tips to make Christmas plum cake
You can use any nuts and fruits of your choice and also feel free to add more and less nuts and dry fruits according your taste
Use good quality dark rum.
You soak dry fruits and nuts in rum for minimum of 2 days to 1 year.
In this Kerala plum cake i have used cinnamon powder and dry ginger powder. But you can also add clove powder and nutmeg.

Ingredients
Ingredients to be soaked in rum
- 1/4 cup Cashews chopped
- 1/4 cup Almond / badam chopped
- 1/4 cup Raisin
- 1/4 cup Balck dry grapes
- 1/4 cup Dates
- 1/4 cup Cherry chopped
- 1/4 cup Tutti frutti
- 1 cup Rum or orange juice
To Make Caramel
- 1/2 cup Sugar
- 1/4 cup Water
To make Chritmas plum cake
- 1 Cup All purpose flour / maida
- 1¼ tsp Baking powder
- 1/2 tsp Cinnamon powder
- 1/2 tsp Dry ginger powder
- 1/4 tsp Cardamom powder
- 3/4 cup Butter room temperature
- 3/4 cup Sugar
- 3 Eggs
- 1 tsp Vanilla essence
- 2 tbsp All purpose flour for dusting the dry fruits
Instructions
To Soak dry fruits
- In a bowl take all the nuts and dry fruits
- Add 1 cup rum and cover then it rest for minimum 2 days to 1 year (I soaked it for 12 days. I kept at room temperature for 2 days then inside refrigerator )
To make sugar
- In a pan add sugar and heat it on low to medium heat and will start to crystalize
- then it slowly starts to melt keep it on low flame till it turns dark brown color
- Take it off heat add water mix it and heat it again till sugar dissolve and switch of the flame and allow it to cool
To make plum cake
- In a bowl sift flour, baking powder, baking soda, salt, cardamom powder, cinnamon powder and dry ginger powder, then set it aside
- To the soaked dry fruits add 2 tbsp flour and mix it this helps to spread the fruits evenly without settling in bottom
- In a large mixing bowl take butter and sugar beat it till they turn pale and fluffy
- Add eggs and beat it (one at a time ) till fluffy incorporated
- Add in vanilla and mix it
- Now add half of the flour mix and half of the caramel(which we made earlier) and cut, fold and mix, and continue with remaining flour and caramel and mix it well
- Now comes the main ingredient the soaked dry fruits
- Add the soaked fruits and nuts to the batter
- Pour it to baking tray and bake it at 180 degree for 45 minutes
- Take it out once the inserted comes out clean
- Allow it to cool
- Dust some icing sugar on top and serve it
