Hotel sambar / Instant Sambar recipe / Tiffin sambar / Pumpkin sambar / idli sambar recipes with detailed step by step photos and videos. Sambar is a part of South Indian meals, made with toor dal, veggies, few spices and herbs.
Instant Sambhar is easy to make with minimum ingredients. This tastes exactly like hotel tiffin sambar and goes well with idli, dosa, pongal and vada. There are many varieties of sambar in south indian cuisine and mainly all are made with toor dal as main ingredient. However you can also make sambar with moong dal too.
This lentil and vegetable stew is popular in South Indian households. Being south indian and myself there are days i prepare sambar more than once in a day like tiffin sambar, sambar for rice. Hotel sambar is my husband’s favorite so i make it regularly to pair it with idli, dosa or pongal.
To make tiffin sambar i used freshly ground sambar powder which enhance the taste.
Use good quality lentil and spices to make sambar
Use fresh pumpkin

Hotel sambar recipe / Instant sambar recipe
Ingredients
To make sambar powder
- 1 tbsp Coriander seeds
- 1 tsp Cumin
- 1/2 tsp Fenugreek / Methi
- 5 nos Dry chili
- 1/2 tsp Hing / Asafeotida
To make Sambar recipe
- 1/2 cup cup Toor dal / pigeon pea
- 1/2 cup Pumpkin
- 4 nos Green chili
- 1 large Tomato
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin / jeera
- 1/4 tsp Fenugreek / methi seeds
- 1 cup Shallots (small onion)
- 2 sprig Curry Leaves
- 2 tbsp Oil
- Water
- Salt
Instructions
Pre preparation to make hotel sambar
- Wash dal and cubed pumpkin
- To a pressure cooker add dal, pumpkin, green chili
- And required salt, water and pressure cook for 3 whistles on medium flame
- Meanwhile in a pan dry roast coriander, red chili, cumin/jeera and fenugreek /methi seeds till they turn aromatic
- Allow it too cool then add hing / asafeotida and blend it to slightly coarse power
To make hotel sambar
- Heat oil in a pot and add mustard seeds, cumin and methi seeds allow it to splutter and curry leaves
- Add chopped shallots, salt and saute it till it turns soft
- Add ground sambar power and saute it for 2 minutes
- Meanwhile open the pressure cooker once the pressure released on its own and mash the dal and pumpkin well
- Add mashed dal pumpkin mixture and mix it well
- Adjust water accordingly
- Taste test for salt allow it boil for 3-4 minutes
- Finally add coriander leaves and switch of the flame
