This kathirikai varuval is easy to make and can be made quickly that it takes only 15 minutes to put everything together.To roast and grind- In a small pan dry roast coriander seeds, mustard seeds, cumin / jeera till they turn aromatic- Allow it cool for sometime and blend it to coarse powderTo make spicy brinjal fryHeat oil in a kadai add crushed garlic and curry leaves saute it for a minute - Add chopped brinjal / eggplant, turmeric powder and salt mix it all well and saute it for 2 minutes- Now add chili powder and mix it-Then cover and cook in low to medium flame for 5 minutes-Then add ground spice powder and mix it-And cook on low flame for 2 minutes or till it turns soft and switch off the flame-Serve it hot with curd rice or plain steamed rice
