Spicy brinjal fry recipe is best accompaniment with any South indian meal. I usually serve it with curd rice or sambar sadham. Brinjal can be cooked in many ways like baking, frying, gravy(stew), and sabzi. it tastes good on all the recipes.
Always choose small and firm brinjal to avoid the bitterness, brinjal should be little and not too soft. I l personally like the green small variety brinjal they taste better than the purple ones but today i made this quick brinjal fry using the purple one as i was not able to find the green brinjal in the market

Ingredients
To roast and grind
- 1 tsp Coriander seeds
- ½ tsp Mustard seeds
- ¼ tsp Fenugreek / methi
- ½ tsp Cumin / Jeera
To make Spicy brinjal fry
- 250 grms Brinjal / Egg plant / kathirikkai green or purple
- 2 tbsp Oil
- 4-5 cloves Garlic crushed
- 2 spring Curry leaves
- 1-2 tsp Chili powder
- ⅛ tsp Turmeric powder
- Salt
Instructions
To roast and grind
- In a small pan dry roast coriander seeds, mustard seeds, cumin / jeera till they turn aromatic
- Allow it cool for sometime and blend it to coarse powder
To make spicy brinjal fry
- Heat oil in a kadai add crushed garlic and curry leaves saute it for a minutes
- Add chopped brinjal / eggplant, turmeric powder and salt mix it all well and saute it for 2 minutes
- Now add chili powder and mix it
- Then cover and cook in low to medium flame for 5 minutes
- Then add ground spice powder and mix it
- And cook on low flame for 2 minutes or till it turns soft and switch off the flame
- Serve it hot with curd rice or plain steamed rice
