Potato capsicum curry is super easy to make that requires only handful of ingredients to make. To give it a twist I made this quick aloo capsicum curry with homemade kuzhambu milaga podi (south indian curry masala powder). It tasted soo good.

Aloo capsicum curry is super easy and delicious side dish recipe, made with potato, capsicum(shimla mirch) and few herbs and spices. It is tastes best when served with roti, pulka or with rice & sambar. To make aloo capsicum curry-Heat a kadai / pan with oil, add mustard seeds once it crackles curry leaves and saute it for minute-Add chopped onion, then saute it till it turns soft-Add cubed potatoes and mix it with onion, add salt cover and cook on low to medium flame for 10 minutes while string occasionally-Now add curry masala powder / Kuzhambu milagai podi and give it a good mix-Add capsicum and mix itCover and cook for 4-5 minutes on medium flame-Mix it all once and taste test for salt and switch of the flame-Garnish it with coriander leaves and Serve it hot with rice or roti
Ingredients
To make aloo capsicum curry
- 3 medium Capsicum bell peppers chopped
- 2 medium Potatoes cubed
- 2 tbsp Oil
- ½ tsp Mustard seeds
- 1 large Onion finely chopped
- 2 spring Curry leaves
- 1 tbsp Curry masala powder kuzhambu millagai podi
- 2 tbsp Peanuts crushed
- Salt as per taste
Instructions
To make aloo capsicum curry
- Heat a kadai / pan with oil, add mustard seeds once it crackles curry leaves and saute it for minute
- Add chopped onion, then saute it till it turns soft
- Add cubed potatoes and mix it with onion,
- Add salt cover and cook on low to medium flame for 10 minutes while string occasionally
- Now add curry masala powder / Kuzhambu milagai podi and give it a good mix
- Add capsicum and mix it
- Cover and cook for 4-5 minutes on medium flame
- Add crushed peanuts and mix it all once and taste test for salt and switch of the flame
- Garnish it with coriander leaves
- Serve it hot with rice or roti
