Diamond cut recipe | Namak para |How to prepare Spicy diamond cut recipe with detailed step by step photos. Spicy diamond cut is simple and easy to prepare homemade snacks. This recipe made of using maida, ajwain, pepper and few other spices and deep fried in oil. It also known as maida khara and namak pare. These are perfect tea time snacks. And also to munch when we are watching tv or reading books. Diamond cuts are easy to prepare with very basic ingredients. I have lots of childhood memories associated with with diamond cuts as my mom makes this during festive time mainly during diwali.
Maida / all purpose can be replaced with whole wheat flour, but the flavour may change a little. This snack has a sweet version which is known as shankarpali or maida biscuit. To these diamond cuts you can also add ginger, garlic and pepper. Today i made it plain version with just adding ajwain / carom seeds and chilli powder. Ajwain is known as omam in tamil, instead of ajwain you can add Jeera/cumin.
If your adding ginger garlic and firstly ground the ginger, garlic and pepper and then add it to the flour. This diamond cuts can be stored in air tight container for a week.

Ingredients
- 2 cup Maida / all purpose flour
- 2 tsp Chili powder
- 1 tsp Ajwain / omam
- oil (for frying +for dough)
- salt as per taste
- water for kneading
Instructions
- Firstly take a large mixing bowl and add Maida /all purpose flour, Chili powder, ajwain and saltand mix all together once
- Now add the hot oil ( In a small kadai heat some oil and keep it ready) and mix it with flour
- Mix the hot oil with the flour mixture well
- Now add water slowly and kneading it to dough
- Knead it to stiff dough and rest it for 10 minutes meanwhile heat oil in kadai for frying
- Again knead the dough once and divide it equal balls
- Sprinkle some dry flour to the surface and take one ball and roll it using rolling pin
- Roll it to thin ( like chappati)
- Cut them horizantly and vertically to diamond shape and gather it using spatula ( if it stick to each other do not panic as it separates once dropped in oil)
- Drop them in hot oil and fry them in medium flame
- take it once it has turned into golden colour
