It is very easy to make with only few ingredients the only thing is you have to soak the urad dal prior.

When i was in chennai we friends use to go for evening tea in near by tea stall were they sell super hot bondas and they also serve chutney to go with it. It taste soo good and we just finish it off with hot ginger tea. I love that place, the fun, chitchat we had with friends and of course the hot bondas. I really miss that place so onec in a while i make these hot bonda and chutney and we enjoy it at home.
As i mentioned earlier Urad dal fritters is very easy to make with handful of ingredients
Few tips to make hotel style bonda
- Do not soak urad dal overnight or for long hrs
- To make the grinding process easy use wet grinder for grinding urad dal
- Do not add more water while grinding the dal
- If batter is loose then add rice flour and adjust the consistency
- Fry the bonda in medium flame
Hotel style bonda recipe / Urad dal Bonda recipe with chutney
Ingredients
- 1 cup Urad dal
- 1 tbsp Chana dal
- 1 tbsp Rice flour
- 2 Green chili finely chopped
- 1 tsp Ginger grated
- 1 tsp Pepper crushed
- 1 tsp Cumin / jeera
- Handful Coriander leaves chopped
- 2 spring Curry leaves
- 2 tbsp Coconut flakes
- Salt
- Water
- Oil for deep frying
Instructions
To make hotel style bonda batter
- Wash and soak urad and 1 tbsp chana dal for 2 hrs
- Strain all the water and transfer the dals to grinding jar
- Now pulse it few times
- Then add 2 to 3 tbsp water
- And grind it into smooth batter Do not add more water to grind
- With help of whisk or hand beater or electric batter beat the batter for 2-3 minutes this helps to fluffy bonda
To make Bonda recipe
- To the urad dal batter add finely chopped onion, coriander leaves, green chili, grated ginger, salt and rice flour
- Mix it all together and you should be able to hold a ball shape
- Now add coconut flakes and mix it again, meanwhile heat for frying
- Take small balls and drop in hot oil and fry it medium flame
- Flip it and fry it in medium flame
- Once it is golden brown and take it out
