Kara chutney recipe is served in almost all the restaurants in tamilnadu with any breakfast. There are many variations in this Kara chutney. I have used both onion and tomato in this chutney to balance the taste. Onions and tomatoes are versatile in Indian cuisine. For better taste better we have to add both onion and tomato. It shall be Vegetarian or Non-vegetarian onion and tomato is used as a base for the curry. I always follow my mom’s recipe for this chutney.
To get good hotel style Kara chutney cook the onion till it lose its rawness. Further add the tomato and tomatoes should be cooked till the water in it evaporated in this kara chutney recipe. You can also add small tamarind in this chutney. Today I used garlic in this chutney but yo can skip it if you don’t want to use it.
Shallot/Chinna vengayam tastes better for this chutney. But I did not have it with me so I added big onion. Typical this chutney is tamilnadu style recipe, and this chutney goes well with Idly, Dosa and Utthapam. This chutney can be prepared quickly with few ingredients. Ingredients
- 2 no. Onion (medium)
- 2 no. Tomato (medium)
- 7 – 8 no. Red chili
- 1 tbsp Urad dal
- 1 tbsp Channa dal
- 2 pods Garlic
- Salt (as per taste)
- 1/4 cup Water
Instructions
- In a kadai heat some oil add 1 tbsp channa dal and 1 tbsp urad dal and saute for a minute
- Now add red chilli and saute
- Further add roughly chopped onion and fry them
- Add tomato and cook till it turns mushy
- Once the mixture cools completely add in mixture jar add 1/4 water and salt as per taste and grind it
- For Tempering, heat a kadai heat some oil add mustard seeds and curry leaves and wait till it crackle and add this tempering to the chutney
