I like to bake these soft breads and tea cakes as this we can serve it for both breakfast and for evening tea. I adapted this pumpkin bread recipe from my zucchini bread recipe and made few changes in it. As i mentioned earlier this pumpkin bread is very moist and tender. I just topped some cream cheese frosting to make it more delicious. Make these super delicious pumpkin bread in this fall season and enjoy it.

Ingredients you will require

All purpose flour

Pumkin puree – i used homemade but you can used store bought

Baking soda

Baking powder

Cinnamon

Ginger

Nutmeg powder

Butter

Sugar

Eggs

Vanilla essence

Make sure that all the ingredients are in room temperature

This Pumpkin spices bread requires few basic baking ingredients.
– Take all the required ingredients
– Sieve All purpose flour / maida, Baking powder, Baking soda,cinnamon, ginger together and set aside
– In a large mixing bowl beat butter and sugar till it gets blended and add in the eggs one at a time and beat until fluffy
– Add in the Pumpkin puree and beat it well, (by now the mixture will turn grainy like curdled which is fine )
– Add the Flour mixture and mix it with the wet Pumpkin mixture do not over mix
– Add walnuts or pecans or mixed nuts and combine it with batter
– Pour the batter into prepared loaf tin and bake it in a pre heated oven at 180 degree c for 40 minutes or till done.
– Take it out once the inserted skewer or knife comes out clean and allow it cool before slicing
– Once the cake cool downs just top it with cream cheese frosting and keep it in fridge for 30 minutes and serve it

  • 1 1/2 cup All purpose flour
  • 1 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/4 tsp Ginger
  • 6 tbsp Butter room temperature
  • 6 tbsp Brown sugar
  • 6 tbsp Granulated sugar
  • 2 small Eggs
  • 1 cup Pumpkin puree
  • 1/4 cup Walnut or pecans

Frosting

  • Cream cheese frosting optional

Instructions
 

  • Take all the required ingredients

Notes

Each oven is different so check after 35 minutes 
You can use both Maida and wheat flour in this Recipe
You can skip walnuts if you dont want them 
Frosting is optional so you can skip it
This cake taste too delicious even without frosting so you can skip it
