I like to bake these soft breads and tea cakes as this we can serve it for both breakfast and for evening tea. I adapted this pumpkin bread recipe from my zucchini bread recipe and made few changes in it. As i mentioned earlier this pumpkin bread is very moist and tender. Best Pumpkin Spice Bread
Ingredients
- 1 1/2 cup All purpose flour
- 1 tsp Baking powder
- 1/4 tsp Baking soda
- 1 tsp Cinnamon
- 1/4 tsp Ginger
- 6 tbsp Butter room temperature
- 6 tbsp Brown sugar
- 6 tbsp Granulated sugar
- 2 small Eggs
- 1 cup Pumpkin puree
- 1/4 cup Walnut or pecans
Frosting
- Cream cheese frosting optional
Instructions
- Take all the required ingredients
- Sieve All purpose flour / maida, Baking powder, Baking soda,cinnamon, ginger together and set aside
- In a large mixing bowl beat butter and sugar till it gets blended and add in the eggs one at a time and beat until fluffy
- Add in the Pumpkin puree and beat it well, (by now the mixture will turn grainy like curdled which is fine )
- Add the Flour mixture and mix it with the wet Pumpkin mixture do not over mix
- Add walnuts or pecans or mixed nuts and combine it with batter
- Pour the batter into prepared loaf tin and bake it in a pre heated oven at 180 degree c for 40 minutes or till done.
- Take it out once the inserted skewer or knife comes out clean and allow it cool before slicing
- Once the cake cool downs just top it with cream cheese frosting and keep it in fridge for 30 minutes and serve it
